Use of Aloe Vera-based Edible Coating Containing Nanoemulsion of Ginger Essential Oil to Extend Trout Fillet Shelf-life
Authors
Abstract:
Background and Objectives: Edible coatings containing natural antimicrobial compounds are appropriate approaches to control the microbial growth and thus improve the quality and shelf-life of fresh, frozen and processed fish products. The aim of this study was to assess effects of aloe vera gel coating containing nanoemulsion of ginger essential oil to extend the shelf life of trout fillets during 12 days of storage in refrigerator (4° C). Materials and Methods: To achieve the optimal nanoemulsion by ultrasonic method and solve Ostwald ripening phenomenon in nanoemulsions, lecithin was used in concentrations of 0, 0.5 and 1% (w/w) and Tween 80 in concentrations of 5 and 10% (w/w). Results: Analyses of particle size, zeta potential and polidispersity indices showed that the prepared nanoemulsions with 10% of Tween and 1% of lecithin included high stability scores and were assessed as the optimal nanoemulsion to extend the shelf life of trout fillets. The coatings containing essential oil nanoemulsion and pure essential oil significantly (p < 0.05) decreased total aerobic mesophilic count, psychrotrophic bacteria, Enterobacteriaceae and lactic acid bacteria compared to the control. Furthermore, spoilage changes were observed earlier in control and aloe vera coatings compared to other treatments. While the coating containing the essential oil nanoemulsion could significantly (p < 0.05) increase the trout fillet shelf-life by controlling microbial and chemical changes compared to other treatments. Furthermore, sensory evaluation showed that the overall acceptability for the nanoemulsion coating was satisfactory during the storage period under cold conditions. Conclusion: Results of this study verified that ginger essential oil was appropriately encapsulated in the nanoemulsion and increased antimicrobial and antioxidant characteristics could extend the shelf life of fish fillets.

Effects of chitosan edible coating containing grape seed extract on the shelf-life of refrigerated rainbow trout fillet
In recent years, the use of edible coatings as a carrier of food additives and antimicrobial compounds in fishery products has been considered. This study was carried out to evaluate the effects of 2% chitosan coating singly or combined with 0.1% grape seed extract (GSE) on microbial (mesophilic and psychrophilic count), chemical (TBA, pH and PV) and sensorial properties of rainbow trout fillet...

Background: The aim of this study was to investigate the effects of chitosan coatings, oregano essential oil, and their combination on microbial quality of chicken fillet during 12 days in refrigerator temperature. Methods: Oregano oil was extracted by water distillation and then different concentrations of oregano oil (1% and 2%) were used for film preparation. Microbiological tests were carri...
full textEffects of Shirazi Gum Edible Coating Containing of Peppermint Essential Oil on Shelf-life of Fresh Greenhouse Cucumbers (Cucumissativus) and Its Quality Assessment during Storage in Refrigerator
Background and Objectives: Greenhouse cucumber is one of the most important summer crops of Iran. Quality of the product is immediately lost after harvest due to physicochemical changes. Thus, use of special pre-processes (especially use of edible coating) to delay their maturity and increase the shelf-life of the product is important. Materials and Methods: To decrease weight loss, preserve nu...

full textEffect of combined application of Pimpinella affinis essential oil and extract in zein edible coating on vacuum packaged rainbow trout fillet quality
In the present study, the antioxidant and antimicrobial effects of essential oil (EO) and extract of Pimpinella affinis on the shelf life of rainbow trout during storage at refrigerator temperature based on three indicators of microbial, chemical and sensory quality parameters were evaluated. For this purpose, fish samples were stored in zein coatings containing 1.00% EO and 2.00% extr...
full textBioactive Edible Coating for Shelf Life Improvment of Organic Strawberries
Organic foods have great importance in environment sustainability and human nutrition. However, they are commercialized with greatly reduced shelf life, especially fruits and vegetables. Considerable amounts of vegetables are lost due to their rapid deterioration by microorganisms such as fungi and bacteria. In this work cell wall degrading enzymes (CWDE) produced by Trichoderma asperellum (T00...
